Preparation

Prepare the Tapioca
- Heat a non-stick frying pan over medium heat. Spread a uniform layer of tapioca starch across the pan, forming a circle. There's no need for oil.
- Cook until the tapioca begins to detach from the bottom of the pan (about 2 minutes).
Add the Filling
- Arrange slices of coalho cheese on one half of the tapioca in the pan. Add the tomato slices on top of the cheese and season with oregano and salt to taste.
- Once the cheese starts to melt, use the spatula to fold the tapioca in half, covering the filling.
Finish
- Leave the tapioca in the pan for another 1 or 2 minutes, until the cheese is completely melted.
- Carefully transfer the tapioca to a plate.
Tips
- For a healthier version, you can add fresh arugula or spinach leaves along with the tomato.
